Ingredients
- 4 medium zucchinis, spiralized into noodles
- 1 pound of boneless, skinless chicken breasts
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 1/2 cup of fresh basil leaves
- 1/4 cup of pine nuts
- 2 cloves of garlic
- 1/2 cup of grated Parmesan cheese
- 1/2 cup of extra virgin olive oil
Instructions
- Preheat a grill or grill pan to medium-high heat.
- Season the chicken breasts with salt and pepper, then grill for 6-7 minutes per side, or until fully cooked. Set aside to rest for 5 minutes before slicing into strips.
- In a food processor, combine 1/2 cup of fresh basil leaves, 1/4 cup of pine nuts, 2 cloves of garlic, and 1/2 cup of grated Parmesan cheese. Pulse until finely chopped.
- With the food processor running, slowly drizzle in 1/2 cup of extra virgin olive oil until the pesto is smooth and well combined. Season with salt and pepper to taste.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the zucchini noodles and sauté for 2-3 minutes, or until just tender. Season with salt and pepper to taste.
- Add the grilled chicken strips to the skillet with the zucchini noodles, then pour the pesto over the top. Toss everything together until well combined and heated through.
