  • In a food processor, combine 1/2 cup of fresh basil leaves, 1/4 cup of pine nuts, 2 cloves of garlic, and 1/2 cup of grated Parmesan cheese. Pulse until finely chopped.
  • With the food processor running, slowly drizzle in 1/2 cup of extra virgin olive oil until the pesto is smooth and well combined. Season with salt and pepper to taste.
  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the zucchini noodles and sauté for 2-3 minutes, or until just tender. Season with salt and pepper to taste.
