Ingredients
- 4 medium zucchinis, spiralized into noodles
- 1 pound of boneless, skinless chicken breasts
- 2 cups of marinara sauce
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1 teaspoon of dried oregano
- 1/2 teaspoon of red pepper flakes
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Preheat a grill or grill pan to medium-high heat.
- Season the chicken breasts with salt, pepper, and 1 tablespoon of olive oil. Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from the grill and let it rest for 5 minutes before slicing into strips.
- In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the spiralized zucchini noodles to the skillet and toss with the garlic and oil. Cook for 2-3 minutes until the noodles are just tender. Season with salt and pepper to taste.
- Pour the marinara sauce over the zucchini noodles and stir to combine. Cook for an additional 2-3 minutes until the sauce is heated through.
- Divide the zucchini noodles and marinara sauce among 4 plates. Top each serving with the grilled chicken strips and sprinkle with dried oregano and red pepper flakes.
