Ingredients
- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese

- 2 tablespoons olive oil
Instructions
- Place the grated zucchini in a colander and sprinkle with 1 teaspoon of salt. Let it sit for 10 minutes, then squeeze out the excess moisture with a clean kitchen towel.
- In a large bowl, combine the grated zucchini, all-purpose flour, grated Parmesan cheese, minced garlic, black pepper, and beaten eggs. Mix well until everything is combined.
- Heat the olive oil in a large skillet over medium heat.
- Scoop about 1/4 cup of the zucchini mixture and drop it into the skillet, flattening it with a spatula to form a fritter. Repeat with the remaining mixture, cooking in batches if necessary.
- Cook the fritters for 3-4 minutes on each side, or until they are golden brown and crispy.
- Transfer the cooked fritters to a paper towel-lined plate to drain any excess oil.
