Instructions

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a large bowl, toss 4 medium sliced zucchinis with 2 tablespoons of olive oil, 2 cloves of minced garlic, 1 teaspoon of dried oregano, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Transfer the seasoned zucchini to a greased 9x13 inch baking dish.
  • In a small bowl, mix 1/2 cup of grated Parmesan cheese with 1/4 cup of bread crumbs. Sprinkle the mixture over the zucchini in the baking dish.
  • Bake in the preheated oven for 40-45 minutes, or until the zucchini is tender and the top is golden brown.
  • Allow to cool for a few minutes before serving. Enjoy!
