Tofu Yakisoba

Ingredients
- 8 oz of firm tofu, drained and cubed
- 8 oz of yakisoba noodles
- 1 small onion, sliced
- 1 carrot, julienned
- 1 bell pepper, sliced
- 2 cups of cabbage, shredded
- 2 cloves of garlic, minced
- 1/4 cup of soy sauce
- 2 tbsp of oyster sauce
- 1 tbsp of sesame oil
- 1 tbsp of vegetable oil
- 1/4 tsp of black pepper
- 1/4 cup of green onions, chopped (for garnish)
Instructions
- Prepare the yakisoba noodles according to package instructions. Drain and set aside.
- In a small bowl, mix together 1/4 cup of soy sauce, 2 tbsp of oyster sauce, and 1/4 tsp of black pepper. Set aside.
- Heat 1 tbsp of vegetable oil in a large pan or wok over medium-high heat. Add the cubed tofu and stir-fry until golden brown. Remove from the pan and set aside.
- In the same pan, add 1 tbsp of sesame oil and sauté the minced garlic until fragrant. Add the sliced onion, julienned carrot, sliced bell pepper, and shredded cabbage. Stir-fry for 3-4 minutes until the vegetables are slightly tender.
- Add the cooked yakisoba noodles and the prepared sauce to the pan. Toss everything together until well combined and heated through.
- Finally, add the stir-fried tofu back into the pan and toss to combine with the noodles and vegetables.
- Transfer the tofu yakisoba to serving plates and garnish with chopped green onions. Serve hot and enjoy!
