Instructions

  • Preheat grill to medium-high heat.
  • Season the chicken breasts with salt and pepper.
  • Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from grill and let it rest for 5 minutes. Slice the chicken into strips.
  • In a small bowl, whisk together mayonnaise, lemon juice, honey, salt, and pepper to make the dressing.
  • In a large mixing bowl, combine the chopped apples, grapes, celery, and walnuts.
  • Add the grilled chicken strips to the bowl and pour the dressing over the salad. Toss gently to coat everything with the dressing.
  • Divide the mixed salad greens among 4 plates and top with the chicken Waldorf salad mixture.
