Ingredients
- 2 boneless, skinless chicken breasts
- 1/2 cup mayonnaise
- 2 tablespoons lemon juice
- 1 tablespoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 apples, cored and chopped
- 1 cup red seedless grapes, halved
- 1/2 cup chopped celery
- 1/2 cup chopped walnuts
- 4 cups mixed salad greens
Instructions
- Preheat grill to medium-high heat.
- Season the chicken breasts with salt and pepper.
- Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from grill and let it rest for 5 minutes. Slice the chicken into strips.
- In a small bowl, whisk together mayonnaise, lemon juice, honey, salt, and pepper to make the dressing.
- In a large mixing bowl, combine the chopped apples, grapes, celery, and walnuts.
- Add the grilled chicken strips to the bowl and pour the dressing over the salad. Toss gently to coat everything with the dressing.
- Divide the mixed salad greens among 4 plates and top with the chicken Waldorf salad mixture.
- Serve immediately and enjoy!
