Instructions

  • In a separate bowl, beat 2 large eggs and then stir in 1 3/4 cups of milk, 1/2 cup of melted unsalted butter, and 1 teaspoon of vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; the batter should be slightly lumpy.
  • Preheat your waffle iron according to the manufacturer's instructions and lightly grease it with non-stick cooking spray.
  • Pour the appropriate amount of batter onto the waffle iron and cook according to the manufacturer's instructions, usually 3-4 minutes or until golden brown and crisp.
  • Repeat with the remaining batter, keeping the cooked waffles warm in a 200°F oven while you finish cooking.
