  • 10 oz of spinach
  • 1/2 cup of kalamata olives
  • 12 oz of pasta

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a baking dish, combine 8 oz of cherry tomatoes, 1/4 cup of olive oil, 1/2 tsp of salt, 1/2 tsp of black pepper, and 1/2 tsp of red pepper flakes. Toss to coat the tomatoes in the oil and spices.
  • Create space in the center of the baking dish and place 4 cloves of garlic in the middle. Place an 8 oz block of feta cheese in the center of the dish, surrounded by the tomatoes.
  • Bake for 30 minutes, or until the tomatoes are bursting and the feta is golden and melty.
  • While the feta and tomatoes are baking, cook 12 oz of pasta according to package instructions. Reserve 1/2 cup of pasta water before draining.
  • In a large skillet, heat a drizzle of olive oil over medium heat. Add 10 oz of spinach and cook until wilted. Season with salt and pepper to taste.
  • Add the roasted tomatoes and feta to the skillet, breaking up the feta with a spoon and stirring to combine with the spinach.
  • Add the cooked pasta to the skillet and toss to combine, adding reserved pasta water as needed to create a creamy sauce.
  • Stir in 1/2 cup of kalamata olives and cook for an additional 2-3 minutes, until everything is heated through.
