  • 1/2 tsp of salt
  • 1/2 tsp of black pepper
  • 4 cloves of garlic
  • 8 oz of feta cheese
  • 12 oz of pasta
  • 1/2 tsp of chili flakes
  • Fresh basil leaves for garnish

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a baking dish, combine 8 oz of cherry tomatoes, 1/4 cup of olive oil, 1/2 tsp of salt, and 1/2 tsp of black pepper. Toss to coat the tomatoes evenly.
  • Create space in the center of the baking dish and place 4 cloves of garlic in the middle. Place an 8 oz block of feta cheese in the center of the dish, surrounded by the tomatoes.
  • Bake for 30 minutes, or until the tomatoes are bursting and the feta is golden and soft.
  • While the feta and tomatoes are baking, cook 12 oz of pasta according to package instructions. Reserve 1/2 cup of pasta water before draining.
  • Once the feta and tomatoes are done, remove from the oven and sprinkle 1/2 tsp of chili flakes over the dish.
  • Using a fork, mash the feta and tomatoes together to create a creamy sauce. Add the cooked pasta to the baking dish and toss to coat, adding reserved pasta water as needed to loosen the sauce.
  • Garnish with fresh basil leaves and serve hot. Enjoy!
