Vietnamese Lemongrass Chicken

Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 3 stalks lemongrass, finely minced
- 4 cloves garlic, minced
- 2 shallots, finely chopped
- 2 tbsp fish sauce
- 2 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp vegetable oil
- 1/2 tsp black pepper
- 1/4 cup chopped fresh cilantro
- Lime wedges, for serving
Instructions
- In a bowl, combine the minced lemongrass, garlic, shallots, fish sauce, soy sauce, honey, vegetable oil, and black pepper.
- Cut the chicken thighs into bite-sized pieces and add them to the bowl, tossing to coat the chicken evenly. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
- Preheat the grill to medium-high heat. Thread the chicken pieces onto skewers, shaking off any excess marinade. Discard the remaining marinade.
- Grill the chicken skewers for 3-4 minutes on each side, or until fully cooked and slightly charred.
- Remove the skewers from the grill and transfer the chicken to a serving platter. Sprinkle with chopped cilantro and serve with lime wedges.
