  • 1/4 cup chopped fresh cilantro

  • 2 tbsp honey
  • 1 tbsp vegetable oil
  • 1/2 tsp black pepper
  • 1/4 cup chopped fresh cilantro
  • Lime wedges, for serving

Instructions

  • In a bowl, combine the minced lemongrass, garlic, shallots, fish sauce, soy sauce, honey, vegetable oil, and black pepper.
  • Cut the chicken thighs into bite-sized pieces and add them to the bowl, tossing to coat the chicken evenly. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  • Preheat the grill to medium-high heat. Thread the chicken pieces onto skewers, shaking off any excess marinade. Discard the remaining marinade.
  • Grill the chicken skewers for 3-4 minutes on each side, or until fully cooked and slightly charred.
  • Remove the skewers from the grill and transfer the chicken to a serving platter. Sprinkle with chopped cilantro and serve with lime wedges.
