Ingredients
- 1 cup of cooked brown rice
- 1 can of black beans, drained and rinsed
- 1 cup of corn kernels
- 1 red bell pepper, sliced
- 1 avocado, diced
- 1/2 cup of cherry tomatoes, halved
- 1/4 cup of red onion, finely chopped
- 1/4 cup of fresh cilantro, chopped
- 1 lime, juiced
- 1/2 teaspoon of cumin
- 1/2 teaspoon of chili powder
- Salt and pepper to taste
- 1/2 cup of extra guacamole for topping
Instructions
- In a large bowl, combine the cooked brown rice, black beans, corn kernels, and sliced red bell pepper.
- In a separate bowl, mix together the diced avocado, cherry tomatoes, red onion, cilantro, lime juice, cumin, and chili powder. Season with salt and pepper to taste to make the guacamole.
- Divide the rice and bean mixture into 4 serving bowls.
