Ingredients
- 1 cup of cooked brown rice
- 1 can of black beans, drained and rinsed
- 1 cup of corn kernels
- 1 red bell pepper, diced
- 1 avocado, sliced
- 1/2 cup of cherry tomatoes, halved
- 1/4 cup of red onion, finely chopped
- 1/4 cup of fresh cilantro, chopped
- 1 lime, juiced
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- Salt and pepper to taste
- 1/4 cup of salsa
- 1/4 cup of sour cream or Greek yogurt (optional)
- 1/4 cup of shredded cheddar cheese (optional)
Instructions
- In a large bowl, combine the cooked brown rice, black beans, corn, diced red bell pepper, cherry tomatoes, red onion, and cilantro.
- In a small bowl, whisk together the lime juice, cumin, chili powder, salt, and pepper. Pour over the rice and bean mixture and toss to combine.
- Divide the mixture into 4 serving bowls.
