Instructions

  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  • Add the sliced onion and cook for 2 minutes, stirring frequently.
  • Add the bell peppers, broccoli, carrots, and snap peas to the skillet and cook for 3-4 minutes, or until the vegetables are tender-crisp.
  • Push the vegetables to the side of the skillet and add the remaining 1 tablespoon of vegetable oil to the empty space.
  • Add the minced garlic, grated ginger, soy sauce, oyster sauce, and sesame oil to the skillet and stir to combine with the vegetables.
  • Stir everything together and cook for an additional 1-2 minutes, or until the sauce has thickened and the vegetables are evenly coated.
  • Season with salt and pepper to taste.
  • Remove from heat and serve the vegetable stir fry hot, over steamed rice or noodles. Enjoy!
