Ingredients
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 zucchini, sliced
- 1 red onion, cut into chunks
- 8 oz of button mushrooms
- 1/4 cup of soy sauce
- 2 tablespoons of sesame oil
- 2 tablespoons of honey
- 1 tablespoon of grated ginger
- 2 cloves of garlic, minced
- 1 tablespoon of curry powder
- Bamboo skewers, soaked in water for 30 minutes
Instructions
- In a small bowl, mix 1/4 cup of soy sauce, 2 tablespoons of sesame oil, 2 tablespoons of honey, 1 tablespoon of grated ginger, 2 cloves of minced garlic, and 1 tablespoon of curry powder to make the marinade.
- Thread the red bell pepper, yellow bell pepper, zucchini, red onion, and button mushrooms onto the soaked bamboo skewers.
- Place the skewers in a shallow dish and pour the marinade over them, turning to coat. Marinate for at least 15 minutes.
- Preheat the grill to medium-high heat. Lightly oil the grill grate.
- Grill the vegetable skewers for 10-15 minutes, turning occasionally, until the vegetables are tender and slightly charred.
