  • 1 cup diced pineapple
  • 1 cup mixed vegetables (peas, carrots, bell peppers)

  • 3 tablespoons soy sauce

  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 teaspoon grated ginger
  • 2 eggs, beaten
  • Salt and pepper to taste

Instructions

  • In the same skillet, heat the remaining 1 tablespoon of sesame oil. Add the minced garlic, diced onion, and grated ginger. Cook for 2-3 minutes until fragrant.
  • Add the mixed vegetables and diced pineapple to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  • Stir in the cooked white rice and soy sauce. Cook for an additional 2-3 minutes, stirring constantly to combine all the ingredients.
