  • 1 cup firm tofu, cubed
  • 2 cups mixed vegetables (such as bok choy, bean sprouts, and sliced mushrooms)
  • 1 lime, cut into wedges
  • Fresh cilantro and Thai basil for garnish
  • Sriracha and hoisin sauce for serving

  • 1 lime, cut into wedges
  • Fresh cilantro and Thai basil for garnish
  • Sriracha and hoisin sauce for serving

Instructions

  • In a large pot, heat the vegetable broth over medium heat. Add the onion, garlic, ginger, star anise, and cinnamon stick. Simmer for 20 minutes to infuse the broth with flavor.
  • While the broth is simmering, prepare the rice noodles according to the package instructions. Drain and set aside.
  • After 20 minutes, remove the aromatics from the broth and stir in the soy sauce and hoisin sauce. Taste and adjust seasoning if needed.
  • Add the tofu and mixed vegetables to the broth and cook for 5-7 minutes, or until the vegetables are tender and the tofu is heated through.
  • Divide the cooked rice noodles among 4 serving bowls. Ladle the hot broth, tofu, and vegetables over the noodles.
  • Garnish with fresh cilantro, Thai basil, and a squeeze of lime juice. Serve with sriracha and hoisin sauce on the side for extra flavor.
