- 1 cup chickpea flour
- 1/4 cup rice flour
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala

- 1/2 teaspoon chili powder

- 1/2 cup water
- 2 cups mixed vegetables (such as onions, potatoes, cauliflower, and spinach), thinly sliced
- Oil for frying
- 1/2 cup plain yogurt
- 1 tablespoon chopped cilantro
- 1 teaspoon grated ginger
- 1 teaspoon finely chopped green chilies
- 1/2 teaspoon chaat masala
- 1/2 teaspoon cumin powder
- 1/2 teaspoon red chili powder
- Salt to taste
Instructions
- In a large mixing bowl, combine 1 cup chickpea flour, 1/4 cup rice flour, 1 teaspoon cumin seeds, 1 teaspoon garam masala, 1/2 teaspoon turmeric, 1/2 teaspoon chili powder, and 1 teaspoon salt.
- Gradually add 1/2 cup water to the dry ingredients and mix to form a smooth, thick batter.
- Add the mixed vegetables to the batter and stir until well coated.
- Heat oil in a deep pan over medium heat for frying.
- Drop spoonfuls of the vegetable batter into the hot oil and fry until golden brown and crispy. Remove and drain on paper towels.
- In a small bowl, mix 1/2 cup plain yogurt, 1 tablespoon chopped cilantro, 1 teaspoon grated ginger, 1 teaspoon finely chopped green chilies, 1/2 teaspoon chaat masala, 1/2 teaspoon cumin powder, 1/2 teaspoon red chili powder, and salt to taste to prepare the spicy dipping sauce.
