  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

Instructions

  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  • Add the diced onion and minced garlic, and sauté for 2-3 minutes until the onion is translucent.
  • Push the onion and garlic to one side of the skillet, and pour the beaten eggs onto the other side. Scramble the eggs until cooked through, then mix with the onion and garlic.
  • Add the mixed vegetables to the skillet and stir-fry for 3-4 minutes until they are tender-crisp.
  • Add the cooked white rice to the skillet, and drizzle with soy sauce and sesame oil. Stir-fry for 3-4 minutes to combine all the ingredients and heat the rice through.
  • Season with salt and pepper to taste, and stir in the chopped green onions.
  • Remove from heat and serve the vegetable fried rice hot, garnished with additional green onions if desired.
