- 2 tablespoons vegetable oil

- 1/2 teaspoon cayenne pepper
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) coconut milk
- 2 cups mixed vegetables (such as bell peppers, carrots, and peas)
- Salt and pepper to taste
- 4 pieces of naan bread
Instructions
- Heat 2 tablespoons of vegetable oil in a large pot over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Cook for 5 minutes until the onion is soft and translucent.
- Stir in 2 teaspoons of curry powder, 1 teaspoon of ground cumin, 1 teaspoon of ground turmeric, and 1/2 teaspoon of cayenne pepper. Cook for 2 minutes to toast the spices.
