Vegetable Chow Mein with Broccoli and Carrots

Ingredients
- 8 oz chow mein noodles
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 onion, sliced
- 1 cup broccoli florets
- 1 cup julienned carrots
- 1 red bell pepper, sliced
- 1/4 cup soy sauce
- 2 tbsp oyster sauce
- 1 tbsp hoisin sauce
- 1 tsp sesame oil
- 1/2 tsp sugar
- 1/4 tsp black pepper
- 2 green onions, chopped
Instructions
- Cook the chow mein noodles according to package instructions. Drain and set aside.
- In a large wok or skillet, heat 2 tbsp of vegetable oil over high heat.
- Add the minced garlic and sliced onion, and stir-fry for 1-2 minutes until fragrant.
- Add the broccoli, carrots, and red bell pepper, and continue to stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- In a small bowl, mix together 1/4 cup soy sauce, 2 tbsp oyster sauce, 1 tbsp hoisin sauce, 1 tsp sesame oil, 1/2 tsp sugar, and 1/4 tsp black pepper.
- Add the cooked chow mein noodles to the wok, then pour the sauce over the noodles and vegetables. Toss everything together to combine and heat through.
- Remove from heat and stir in the chopped green onions.
