Ingredients
- 1 block of firm tofu, drained and crumbled
- 1 tablespoon of olive oil
- 1/2 onion, diced
- 1 bell pepper, diced
- 2 cloves of garlic, minced
- 1 teaspoon of turmeric
- 1/2 teaspoon of cumin
- 1/2 teaspoon of paprika
- Salt and pepper to taste
- 2 tablespoons of nutritional yeast
- 2 tablespoons of fresh parsley, chopped
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add 1/2 onion and 1 bell pepper to the skillet and sauté for 3-4 minutes, until softened.
- Add 2 cloves of minced garlic to the skillet and cook for an additional 1 minute.
- Add the crumbled tofu to the skillet and sprinkle with 1 teaspoon of turmeric, 1/2 teaspoon of cumin, and 1/2 teaspoon of paprika. Stir to combine and cook for 5-7 minutes, until the tofu is heated through and slightly golden.
- Season with salt and pepper to taste, then stir in 2 tablespoons of nutritional yeast for a cheesy flavor.
- Remove the skillet from heat and sprinkle with 2 tablespoons of fresh chopped parsley before serving.
