  • In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, Kalamata olives, and chopped parsley. Toss to mix well.
  • In a small bowl, whisk together the remaining 2 tablespoons of olive oil, lemon juice, tahini, and water to make the dressing.
