Vegan Tofu Mediterranean Bowl with Avocado

Ingredients
- 1 block of extra firm tofu, drained and pressed
 - 1/4 cup of olive oil
 - 1 teaspoon of dried oregano
 - 1 teaspoon of dried thyme
 - 1/2 teaspoon of garlic powder
 - Salt and pepper to taste
 - 2 cups of cooked quinoa
 - 1 cup of cherry tomatoes, halved
 - 1/2 cup of sliced cucumber
 - 1/4 cup of sliced red onion
 - 1/4 cup of pitted Kalamata olives
 - 1/4 cup of chopped fresh parsley
 - 1 ripe avocado, sliced
 - Juice of 1 lemon
 - 2 tablespoons of tahini
 - 2 tablespoons of water
 
Instructions
- Preheat the oven to 400°F (200°C).
 - Cut the pressed tofu into cubes and place them on a baking sheet lined with parchment paper.
 - In a small bowl, whisk together 2 tablespoons of olive oil, dried oregano, dried thyme, garlic powder, salt, and pepper. Pour the mixture over the tofu cubes and toss to coat evenly.
 - Bake the tofu in the preheated oven for 15 minutes, or until golden and crispy.
 - In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, Kalamata olives, and chopped parsley. Toss to mix well.
 - In a small bowl, whisk together the remaining 2 tablespoons of olive oil, lemon juice, tahini, and water to make the dressing.
 - Divide the quinoa mixture into two serving bowls. Top each bowl with the baked tofu cubes and sliced avocado.
