  • 1 pint of cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup of pitted Kalamata olives
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of fresh mint, chopped

Instructions

  • In a shallow dish, whisk together 1/4 cup of olive oil, 3 tablespoons of red wine vinegar, 1 teaspoon of dried oregano, 1/2 teaspoon of garlic powder, and salt and pepper to taste.
  • Cut the pressed tofu into small cubes and add them to the marinade, gently tossing to coat. Let the tofu marinate for at least 10 minutes.
  • In a large bowl, combine the marinated tofu, diced cucumber, halved cherry tomatoes, thinly sliced red onion, pitted Kalamata olives, chopped parsley, and chopped mint.
  • Toss the salad gently to combine all the ingredients and coat them with the marinade.
