Instructions

  • In a large pot, heat 2 tbsp of olive oil over medium heat.
  • Add the chopped onion and minced garlic to the pot, and sauté for 3-4 minutes until the onion is translucent.
  • Add the diced sweet potatoes to the pot, along with the ground cumin, ground cinnamon, and cayenne pepper. Stir to coat the sweet potatoes with the spices.
  • Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the sweet potatoes are tender.
  • Once the sweet potatoes are cooked, use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth, then return to the pot.
  • Stir in the coconut milk and season the soup with salt and pepper to taste. Simmer for an additional 5 minutes to heat through.
  • Serve the vegan sweet potato soup hot, garnished with a drizzle of coconut milk and a sprinkle of ground cumin or chopped fresh herbs if desired.
