Ingredients
- 14 oz block of firm tofu, drained and pressed
- 1/4 cup olive oil
- 3 tbsp red wine vinegar
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 large cucumber, diced
- 1 pint cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup pitted Kalamata olives
- 1/2 cup chopped fresh parsley
- 1/2 cup vegan feta cheese, crumbled
- 1 head romaine lettuce, chopped
Instructions
- Preheat a grill or grill pan over medium-high heat.
- Cut the pressed tofu into 1-inch cubes and place in a shallow dish.
- In a small bowl, whisk together 2 tbsp of olive oil, red wine vinegar, oregano, garlic powder, salt, and black pepper.
- Pour the marinade over the tofu, gently toss to coat, and let it marinate for 10 minutes.
- Grill the marinated tofu for 3-4 minutes on each side, until grill marks appear. Remove from the grill and set aside.
- In a large salad bowl, combine the diced cucumber, halved cherry tomatoes, sliced red onion, Kalamata olives, and chopped parsley.
- In a small bowl, whisk together the remaining 2 tbsp of olive oil and a splash of red wine vinegar to make the dressing.
- Add the grilled tofu, vegan feta cheese, and chopped romaine lettuce to the salad bowl.
- Drizzle the dressing over the salad and toss gently to combine.
