  • 14 oz block of firm tofu, drained and pressed
  • 1/4 cup olive oil
  • 3 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 large cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup pitted Kalamata olives
  • 1/2 cup chopped fresh parsley
  • 1/2 cup vegan feta cheese, crumbled
  • 1 head romaine lettuce, chopped

Instructions

  • Preheat a grill or grill pan over medium-high heat.
  • Cut the pressed tofu into 1-inch cubes and place in a shallow dish.
  • In a small bowl, whisk together 2 tbsp of olive oil, red wine vinegar, oregano, garlic powder, salt, and black pepper.
  • Pour the marinade over the tofu, gently toss to coat, and let it marinate for 10 minutes.
  • Grill the marinated tofu for 3-4 minutes on each side, until grill marks appear. Remove from the grill and set aside.
  • In a large salad bowl, combine the diced cucumber, halved cherry tomatoes, sliced red onion, Kalamata olives, and chopped parsley.
  • In a small bowl, whisk together the remaining 2 tbsp of olive oil and a splash of red wine vinegar to make the dressing.
  • Add the grilled tofu, vegan feta cheese, and chopped romaine lettuce to the salad bowl.
  • Drizzle the dressing over the salad and toss gently to combine.
