Instructions

  • In a food processor, combine the chickpeas, onion, garlic, parsley, cumin, coriander, salt, and black pepper. Pulse until the mixture is coarsely ground but not pureed.
  • Transfer the mixture to a bowl and stir in the flour. Shape the mixture into 12 small patties.
  • In a large skillet, heat the olive oil over medium heat. Cook the falafel patties for 3-4 minutes on each side, or until golden brown and crispy. Remove from the skillet and drain on paper towels.
  • Warm the tortillas in a dry skillet or microwave for a few seconds to make them pliable.
  • To assemble the wraps, place a few falafel patties in the center of each tortilla. Top with shredded lettuce, diced tomatoes, a drizzle of tahini sauce, and a spoonful of pickled vegetables.
  • Fold in the sides of the tortilla and then roll it up tightly, tucking in the filling as you go.
  • Serve the falafel wraps immediately, or wrap them in foil and refrigerate for later. Enjoy!
