Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/2 cup chopped onion
- 3 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp all-purpose flour
- 2 tbsp olive oil
- 4 large whole wheat tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup tahini sauce
- 1/2 cup pickled vegetables (such as carrots, cucumbers, and red onions)
Instructions
- In a food processor, combine the chickpeas, onion, garlic, parsley, cumin, coriander, salt, and black pepper. Pulse until the mixture is coarsely ground but not pureed.
- Transfer the mixture to a bowl and stir in the flour. Shape the mixture into 12 small patties.
- In a large skillet, heat the olive oil over medium heat. Cook the falafel patties for 3-4 minutes on each side, or until golden brown and crispy. Remove from the skillet and drain on paper towels.
- Warm the tortillas in a dry skillet or microwave for a few seconds to make them pliable.
- To assemble the wraps, place a few falafel patties in the center of each tortilla. Top with shredded lettuce, diced tomatoes, a drizzle of tahini sauce, and a spoonful of pickled vegetables.
