Ingredients
- 1 can (15 oz) of chickpeas, drained and rinsed
- 1 tablespoon of olive oil
- 1/2 onion, diced
- 1/2 red bell pepper, diced
- 1/2 teaspoon of turmeric
- 1/2 teaspoon of cumin
- 1/2 teaspoon of paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a medium-sized skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the diced onion and red bell pepper to the skillet and sauté for 3-4 minutes, until softened.
- Add the drained and rinsed chickpeas to the skillet, and use a fork to mash them slightly, creating a scrambled egg-like texture.
- Sprinkle the turmeric, cumin, and paprika over the chickpeas, and stir to combine. Cook for an additional 3-4 minutes, until the chickpeas are heated through and the spices are fragrant.
- Season with salt and pepper to taste, and remove from heat.
