Instructions

  • Season the veal cutlets with salt and pepper on both sides.
  • Dredge each cutlet in the flour, then dip into the beaten eggs, and coat with the breadcrumbs mixed with Parmesan cheese, pressing gently to adhere.
  • In a large skillet, heat the olive oil over medium-high heat. Add the breaded veal cutlets and cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove from the skillet and drain on paper towels.
  • Preheat the broiler. Open the sandwich rolls and place them on a baking sheet, cut side up. Place a cooked veal cutlet on the bottom half of each roll, spoon marinara sauce over the cutlets, and top with a slice of mozzarella cheese.
  • Place the baking sheet under the broiler and broil for 2-3 minutes, or until the cheese is melted and bubbly.
