Vareniki with Sour Cream Topping

Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup warm water
- 2 cups mashed potatoes
- 1/2 cup finely chopped onion
- 1/4 cup butter
- 1/2 cup sour cream
- 1/4 cup chopped fresh dill
- Salt and pepper to taste
Instructions
- In a large bowl, combine 2 cups of flour and 1/2 teaspoon of salt. Gradually add 1/2 cup of warm water, kneading the dough until smooth. Cover with a damp cloth and let it rest for 30 minutes.
- In a separate bowl, mix together 2 cups of mashed potatoes, 1/2 cup of finely chopped onion, and salt and pepper to taste.
- On a floured surface, roll out the dough to 1/8 inch thickness. Cut out circles using a cookie cutter or a glass.
- Place a spoonful of the potato filling in the center of each circle. Fold the dough over the filling and pinch the edges to seal.
- Bring a large pot of salted water to a boil. Cook the vareniki in batches for 3-4 minutes, or until they float to the surface. Remove with a slotted spoon and drain.
- In a small saucepan, melt 1/4 cup of butter over low heat. Pour the melted butter over the cooked vareniki.
- Serve the vareniki with a dollop of sour cream on top and a sprinkle of chopped fresh dill. Enjoy!
