Spicy Vada Pav with Chutney Spread

Ingredients
- 4 pav buns
- 4 boiled and mashed potatoes
- 1 cup gram flour (besan)
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon cumin seeds
- 1/2 teaspoon baking soda
- Salt to taste
- Oil for frying
- 1/2 cup tamarind chutney
- 1/2 cup green chutney
- 1/2 cup dry garlic chutney
Instructions
- In a bowl, mix 1 cup gram flour, 1 teaspoon turmeric powder, 1 teaspoon red chili powder, 1 teaspoon cumin seeds, 1/2 teaspoon baking soda, and salt to taste. Add water gradually to make a smooth batter.
- Divide the mashed potatoes into 4 equal portions and shape them into round balls. Dip each potato ball into the prepared gram flour batter, ensuring it is coated evenly.
- Heat oil in a deep pan over medium heat. Carefully drop the coated potato balls into the hot oil and fry until they turn golden brown and crispy. Remove and drain on paper towels.
- Slice the pav buns horizontally without cutting all the way through. Spread a generous amount of tamarind chutney on one side and green chutney on the other side of each bun.
- Place a fried potato ball in each prepared pav bun.
- Sprinkle dry garlic chutney on top of the potato balls.
- Serve the spicy Vada Pav with chutney spread immediately and enjoy!
