Cheese Vada Pav

Ingredients
- 4 large potatoes, boiled and mashed
- 1 cup grated cheese
- 1/2 cup chopped cilantro
- 1/4 cup chopped green chilies
- 1 tablespoon ginger-garlic paste
- 1 teaspoon mustard seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon cumin seeds
- 1/2 teaspoon asafoetida (hing)
- Salt to taste
- Oil for frying
- 4 pav buns
- 4 tablespoons tamarind chutney
- 4 tablespoons green chutney
- 4 tablespoons garlic chutney
Instructions
- In a mixing bowl, combine the mashed potatoes, grated cheese, chopped cilantro, chopped green chilies, and ginger-garlic paste. Mix well and set aside.
- Heat 2 tablespoons of oil in a pan over medium heat. Add mustard seeds, cumin seeds, and asafoetida. Let them splutter.
- Add turmeric powder, red chili powder, and salt to the pan. Mix well and cook for 1-2 minutes.
- Pour the spice mixture over the potato and cheese mixture. Mix until well combined.
- Divide the mixture into 4 equal portions and shape them into round patties.
- Heat oil in a deep pan over medium heat for frying.
- Dip each potato patty in a batter made of gram flour and water, then carefully place it in the hot oil. Fry until golden brown and crispy. Remove and drain on paper towels.
- Slice the pav buns in half, but not all the way through. Spread tamarind chutney on one side and green chutney on the other side of each bun.
- Place a cheese vada in each bun and top with garlic chutney.
