- 1 pound spicy turkey sausage
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cans black beans, drained and rinsed
- 1 can diced tomatoes
- 1 cup chicken broth
- 1 bay leaf
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Cooked white rice, for serving
- Chopped fresh cilantro, for garnish
Instructions
- In a large pot, cook 1 pound of spicy turkey sausage over medium heat, breaking it up with a spoon, until browned and cooked through, about 8-10 minutes.
- Remove the cooked sausage from the pot and set aside.
- In the same pot, add 1 tablespoon of olive oil and sauté 1 chopped onion and 3 minced garlic cloves until softened, about 5 minutes.
- Stir in the cooked turkey sausage, 2 cans of drained and rinsed black beans, 1 can of diced tomatoes, 1 cup of chicken broth, 1 bay leaf, 1 teaspoon of cumin, and 1 teaspoon of paprika.
- Season with salt and pepper to taste.
- Bring the mixture to a simmer, then reduce the heat to low, cover, and let it cook for 1.5 hours, stirring occasionally.
- Remove the bay leaf and adjust the seasoning if necessary.
- Serve the spicy turkey sausage feijoada over cooked white rice and garnish with chopped fresh cilantro.
