Ingredients
- 1 lb turkey sausage, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cans (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken broth
- 1 bay leaf
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 cups cooked rice
Instructions
- In a large pot, cook the turkey sausage over medium heat until browned, about 5 minutes.
- Add the chopped onion and minced garlic, and cook until softened, about 3 minutes.
- Stir in the black beans, diced tomatoes, chicken broth, bay leaf, cumin, paprika, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low and simmer for 45 minutes, stirring occasionally.
- While the feijoada is simmering, heat the cooked rice in a separate pot or microwave until warm.
- Once the feijoada is ready, remove the bay leaf and adjust seasoning if needed.
- Serve the turkey sausage feijoada with the warm rice on the side. Enjoy!
