Instructions

  • In a large skillet, cook the chopped turkey sausage over medium heat until browned and cooked through, about 5 minutes.
  • Add the diced onion and bell pepper to the skillet and cook for an additional 2 minutes, until softened.
  • In a separate bowl, whisk the eggs with salt and black pepper. Pour the eggs into the skillet with the sausage and vegetables. Cook, stirring occasionally, until the eggs are set, about 3-4 minutes.
  • Warm the flour tortillas in a separate skillet or in the microwave for 20 seconds.
  • Divide the cooked sausage and egg mixture between the two tortillas. Top each with sliced avocado, salsa, and shredded cheddar cheese.
  • Fold in the sides of the tortillas and roll them up tightly to form burritos.
