  • 2 tablespoons lemon juice

Instructions

  • Rinse the quinoa under cold water using a fine-mesh strainer.
  • In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa and reduce heat to low. Cover and simmer for 15 minutes, or until all the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.
  • In a large bowl, combine the cooked quinoa, drained tuna, sliced avocado, halved cherry tomatoes, chopped red onion, and chopped cilantro.
  • Drizzle the dressing over the quinoa mixture and toss gently to combine.
  • Divide the quinoa mixture into two bowls and serve immediately. Enjoy!
