Tostadas de Tinga
Created by: Howcan Team
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 chipotle peppers in adobo sauce, chopped
- 1 cup tomato puree
- 1 tsp dried oregano
- 1 tsp cumin
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 8 tostada shells
- 1 cup refried beans
- 1 cup shredded lettuce
- 1/2 cup crumbled queso fresco
- 1 avocado, sliced
- 1/4 cup chopped fresh cilantro
- Lime wedges for serving
Instructions
- In a large pot, place the chicken breasts and cover with water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the chicken is cooked through. Remove the chicken from the pot and shred it using two forks.
- In a large skillet, heat 1 tablespoon of oil over medium heat. Add the chopped onion and cook until softened, about 3 minutes. Add the minced garlic and cook for an additional 1 minute.
- Stir in the chopped chipotle peppers, tomato puree, oregano, cumin, smoked paprika, and shredded chicken. Season with salt and pepper to taste. Simmer for 10-15 minutes, stirring occasionally, until the sauce has thickened and the flavors have melded together.
- While the tinga is simmering, heat the tostada shells in a dry skillet over medium heat for 1-2 minutes on each side, until they are warm and crispy.
- To assemble the tostadas, spread a layer of refried beans on each tostada shell. Top with a generous portion of the tinga chicken, shredded lettuce, crumbled queso fresco, avocado slices, and chopped cilantro.
- Serve the tostadas de tinga with lime wedges on the side for squeezing over the top. Enjoy!
