Ingredients
- 8 oz of spaghetti
- 2 tablespoons of olive oil
- 3 cloves of garlic, minced
- 2 medium zucchinis, spiralized
- 2 cups of cherry tomatoes, halved
- 1/4 cup of fresh basil, chopped
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Cook the spaghetti according to package instructions. Drain and set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
- Add the spiralized zucchini to the skillet and sauté for 3-4 minutes until tender.
- Stir in the halved cherry tomatoes and cook for an additional 2-3 minutes until the tomatoes are slightly softened.
- Add the cooked spaghetti to the skillet and toss to combine with the zucchini and tomatoes. Cook for 1-2 minutes to heat through.
- Remove the skillet from the heat and stir in the chopped basil. Season with salt and pepper to taste.
- Serve the pasta in individual bowls, garnished with grated Parmesan cheese. Enjoy!
