  • 1 cup of long-grain white rice
  • 1 1/2 cups of vegetable broth

  • 1 block of firm tofu, drained and cubed
  • 1/2 cup of diced onion
  • 1/2 cup of diced bell pepper
  • 1/2 cup of diced celery
  • 3 cloves of garlic, minced
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cayenne pepper
  • 1/2 teaspoon of dried thyme
  • 1/2 teaspoon of dried oregano
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of salt
  • 2 green onions, chopped
  • Hot sauce, to taste

Instructions

  • In a medium saucepan, combine 1 cup of rice and 1 1/2 cups of vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the cubed tofu and cook for 5-7 minutes, or until golden brown. Remove the tofu from the skillet and set aside.
  • In the same skillet, add the diced onion, bell pepper, and celery. Cook for 5 minutes, or until the vegetables are softened.
  • Stir in the minced garlic, paprika, cayenne pepper, thyme, oregano, black pepper, and salt. Cook for an additional 2 minutes, or until the spices are fragrant.
  • Add the cooked rice and browned tofu to the skillet, and stir to combine. Cook for 2-3 minutes, or until heated through.
  • Remove the skillet from the heat and stir in the chopped green onions. Serve the extra spicy tofu vegetable dirty rice with hot sauce to taste. Enjoy!
