Tofu Vegetable Biryani with Cauliflower Rice

Ingredients
- 1 block of firm tofu, pressed and cubed
- 2 cups of cauliflower rice
- 1 onion, thinly sliced
- 1 bell pepper, diced
- 1 cup of mixed vegetables (carrots, peas, green beans)
- 2 tomatoes, chopped
- 3 cloves of garlic, minced
- 1 inch of ginger, grated
- 1/4 cup of plain yogurt
- 1/4 cup of chopped cilantro
- 2 tablespoons of biryani masala
- 1 teaspoon of turmeric
- 1 teaspoon of cumin seeds
- 1/2 teaspoon of red chili powder
- 2 tablespoons of cooking oil
- Salt to taste
Instructions
- In a large skillet, heat 1 tablespoon of oil over medium heat. Add the cubed tofu and cook until golden brown on all sides. Remove from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of oil. Add the cumin seeds and let them sizzle for a few seconds. Then add the sliced onion, minced garlic, and grated ginger. Saute until the onions are translucent.
- Add the diced bell pepper and mixed vegetables to the skillet. Cook for 5-7 minutes until the vegetables are slightly tender.
- Stir in the chopped tomatoes, biryani masala, turmeric, red chili powder, and salt. Cook for another 5 minutes until the tomatoes are soft and the spices are fragrant.
- Add the cauliflower rice to the skillet and mix well with the vegetable and spice mixture. Cook for 3-4 minutes until the cauliflower rice is heated through.
- Gently fold in the cooked tofu and plain yogurt. Cook for an additional 2-3 minutes, stirring gently to combine all the ingredients.
