Tofu Satay with Peanut Sauce

Ingredients
- 1 block of firm tofu, cut into cubes
- 1/4 cup soy sauce
- 2 tablespoons of sesame oil
- 2 cloves of garlic, minced
- 1 tablespoon of grated ginger
- 1/4 cup of peanut butter
- 2 tablespoons of lime juice
- 2 tablespoons of brown sugar
- 1/4 cup of water
- Bamboo skewers, soaked in water for 30 minutes
Instructions
- In a bowl, mix together 1/4 cup of soy sauce, 1 tablespoon of sesame oil, minced garlic, and grated ginger. Add the tofu cubes and marinate for 15-20 minutes.
- While the tofu is marinating, prepare the peanut sauce. In a small saucepan, combine 1/4 cup of peanut butter, 1 tablespoon of sesame oil, 2 tablespoons of lime juice, 2 tablespoons of brown sugar, and 1/4 cup of water. Cook over low heat, stirring constantly, until the sauce is smooth and heated through. Set aside.
- Thread the marinated tofu cubes onto the soaked bamboo skewers.
- Heat a grill or grill pan over medium-high heat. Brush the tofu skewers with the remaining 1 tablespoon of sesame oil and grill for 3-4 minutes on each side, or until grill marks appear.
- Serve the grilled tofu satay with the peanut sauce on the side for dipping. Enjoy!
