Tofu Pulao

Ingredients
- 1 cup basmati rice
- 200g firm tofu, cubed
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 teaspoon cumin seeds
- 1 cinnamon stick
- 2 cardamom pods
- 4 cloves
- 1 bay leaf
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 2 cups vegetable broth
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 20 minutes, then drain and set aside.
- Heat the vegetable oil in a large pan over medium heat. Add the cumin seeds, cinnamon stick, cardamom pods, cloves, and bay leaf. Sauté for 1-2 minutes until fragrant.
- Add the chopped onion, garlic, and grated ginger to the pan. Cook for 3-4 minutes until the onions are soft and translucent.
- Stir in the turmeric powder and garam masala, then add the cubed tofu. Cook for 2-3 minutes to lightly brown the tofu.
- Add the soaked and drained basmati rice to the pan. Stir gently to combine with the tofu and spices.
- Pour in the vegetable broth and season with salt. Bring to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
- Fluff the pulao with a fork and remove the cinnamon stick, cardamom pods, cloves, and bay leaf. Garnish with fresh cilantro before serving.
