Ingredients
- 1 block of firm tofu, sliced into 1/2 inch thick pieces
- 1 cup of breadcrumbs
- 1/2 cup of grated Parmesan cheese
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 eggs, beaten
- 2 cups of marinara sauce
- 1 cup of shredded mozzarella cheese
- Fresh basil leaves for garnish
Instructions
- Preheat the oven to 375 degrees F. Grease a baking dish with olive oil.
- In a shallow dish, combine 1 cup of breadcrumbs, 1/2 cup of grated Parmesan cheese, 1 teaspoon of dried oregano, 1 teaspoon of dried basil, 1/2 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Dip each tofu slice into the beaten eggs, then coat with the breadcrumb mixture, pressing gently to adhere. Place the coated tofu slices in the prepared baking dish.
- Bake the tofu in the preheated oven for 25 minutes, or until golden and crispy.
- Remove the tofu from the oven and spoon marinara sauce over each slice. Sprinkle with shredded mozzarella cheese.
- Return the baking dish to the oven and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
