Ingredients
- 1 block of firm tofu, drained and cubed
- 1 cup of quinoa
- 2 cups of mixed vegetables (bell peppers, broccoli, carrots, snap peas)
- 3 tablespoons of soy sauce
- 2 tablespoons of sesame oil
- 2 cloves of garlic, minced
- 1 teaspoon of ginger, grated
- 1/4 cup of vegetable broth
- 2 green onions, chopped
- 1 tablespoon of cornstarch
- Salt and pepper to taste
- 2 tablespoons of vegetable oil
Instructions
- Cook 1 cup of quinoa according to package instructions and set aside.
- In a small bowl, mix 3 tablespoons of soy sauce, 2 tablespoons of sesame oil, minced garlic, grated ginger, and vegetable broth. Set aside.
- In a separate bowl, toss the cubed tofu with 1 tablespoon of cornstarch until evenly coated.
- Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the tofu and cook until golden brown on all sides. Remove from the skillet and set aside.
- In the same skillet, add the mixed vegetables and cook for 3-4 minutes until slightly tender.
- Return the tofu to the skillet with the vegetables. Pour the soy sauce mixture over the tofu and vegetables. Stir-fry for an additional 2-3 minutes until the sauce thickens and coats the tofu and vegetables.
- Season with salt and pepper to taste. Stir in the cooked quinoa and chopped green onions. Cook for another 1-2 minutes to heat through.
- Remove from heat and serve the tofu and mixed vegetable stir-fry with quinoa immediately. Enjoy!
