Tofu and Broccoli Stir-Fry

Ingredients
- 1 block of firm tofu, drained and cubed
- 2 cups of broccoli florets
- 1 red bell pepper, sliced
- 1 small onion, sliced
- 3 cloves of garlic, minced
- 1 tablespoon of ginger, minced
- 1/4 cup of soy sauce
- 2 tablespoons of hoisin sauce
- 1 tablespoon of rice vinegar
- 1 tablespoon of sesame oil
- 2 tablespoons of vegetable oil
- 1 teaspoon of cornstarch
- 1/4 cup of water
- Cooked rice or noodles for serving
Instructions
- In a small bowl, whisk together 1/4 cup of soy sauce, 2 tablespoons of hoisin sauce, 1 tablespoon of rice vinegar, 1 tablespoon of sesame oil, 1 teaspoon of cornstarch, and 1/4 cup of water. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the cubed tofu and cook until golden brown on all sides. Remove the tofu from the skillet and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the minced garlic and ginger, and sauté for 1 minute until fragrant.
- Add the sliced onion and red bell pepper to the skillet, and stir-fry for 2-3 minutes until slightly softened.
- Add the broccoli florets to the skillet and stir-fry for an additional 2-3 minutes until the broccoli is tender-crisp.
- Return the cooked tofu to the skillet, and pour the sauce over the tofu and vegetables. Stir-fry for 1-2 minutes until the sauce thickens and coats everything evenly.
- Serve the tofu and broccoli stir-fry over cooked rice or noodles. Enjoy!
