Ingredients
- 12 rice paper wrappers
- 1 cup cooked and peeled shrimp
- 1 cup vermicelli noodles, cooked and drained
- 1 cup shredded lettuce
- 1 cup bean sprouts
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro leaves
- 1/2 cup fresh basil leaves

- Peanut Dipping Sauce:
- 1/4 cup peanut butter
- 2 tablespoons hoisin sauce
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 teaspoon sesame oil
- 1 clove garlic, minced
- 2-3 tablespoons water
Instructions
- Prepare all the ingredients and have them ready for assembly.
- Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for a few seconds to soften.
- Lay the wrapper flat on a clean, damp kitchen towel.
- In a row across the center, place a handful of vermicelli noodles, shrimp, lettuce, bean sprouts, mint, cilantro, and basil, leaving about 2 inches uncovered on each side.
- Fold the uncovered sides inward, then tightly roll the wrapper, beginning at the end with the lettuce. Repeat with the remaining ingredients.
- In a small bowl, mix together the peanut butter, hoisin sauce, soy sauce, lime juice, sesame oil, and garlic. Gradually add water until the sauce reaches a smooth, pourable consistency.
- Serve the spring rolls with the peanut dipping sauce and garnish with chopped peanuts.
- Enjoy your delicious Thai fresh spring rolls!
Thai Fresh Spring Rolls, also known as "po pia sod," are a popular dish in Thai cuisine. Originating in Thailand, these fresh and healthy rolls are made with a delicate balance of fresh vegetables, herbs, and often shrimp or tofu, all wrapped in a translucent rice paper. The dish is believed to have been created in the royal palaces of Thailand, where chefs would craft these exquisite rolls for the royal family. Today, Thai Fresh Spring Rolls can be found in restaurants and street food stalls throughout Thailand, especially in regions like Bangkok and Chiang Mai. The key to a perfect Thai Fresh Spring Roll lies in the freshness of the ingredients and the skillful assembly of the roll. The best versions of this dish can be found in authentic Thai restaurants that prioritize using high-quality, locally sourced ingredients. The most important elements to get right are the balance of flavors and textures, as well as the dipping sauce, which often includes a mix of sweet, sour, and spicy flavors. While the traditional method of making Thai Fresh Spring Rolls involves using shrimp or tofu, there are also variations that include other proteins such as chicken or pork. Additionally, some chefs may add a unique twist to the dish by incorporating different herbs or vegetables, making each roll a delightful surprise for the taste buds. Whether enjoyed as an appetizer or a light meal, Thai Fresh Spring Rolls continue to be a beloved dish that showcases the vibrant and fresh flavors of Thai cuisine.
