Ingredients
- 12 rice paper wrappers
- 1 cup cooked and peeled shrimp
- 1 cup vermicelli noodles, cooked and drained
- 1 cup shredded lettuce
- 1 cup bean sprouts
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro leaves
- 1/2 cup fresh basil leaves
- 1/4 cup chopped peanuts
- Peanut Dipping Sauce:
- 1/4 cup peanut butter
- 2 tablespoons hoisin sauce
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 teaspoon sesame oil
- 1 clove garlic, minced
- 2-3 tablespoons water
Instructions
- Prepare all the ingredients and have them ready for assembly.
- Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for a few seconds to soften.
- Lay the wrapper flat on a clean, damp kitchen towel.
- In a row across the center, place a handful of vermicelli noodles, shrimp, lettuce, bean sprouts, mint, cilantro, and basil, leaving about 2 inches uncovered on each side.
- Fold the uncovered sides inward, then tightly roll the wrapper, beginning at the end with the lettuce. Repeat with the remaining ingredients.
- In a small bowl, mix together the peanut butter, hoisin sauce, soy sauce, lime juice, sesame oil, and garlic. Gradually add water until the sauce reaches a smooth, pourable consistency.
- Serve the spring rolls with the peanut dipping sauce and garnish with chopped peanuts.
