Thai Fresh Rolls with Tofu

Ingredients
- 8 rice paper wrappers
- 1 block of firm tofu, sliced into thin strips
- 1 cup shredded lettuce
- 1 cup shredded carrots
- 1 cucumber, julienned
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro leaves
- 1/4 cup chopped peanuts
- 1/4 cup hoisin sauce
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1 teaspoon sriracha sauce
- 1/4 cup water
Instructions
- In a small bowl, whisk together the hoisin sauce, soy sauce, lime juice, honey, sriracha sauce, and water to make the dipping sauce. Set aside.
- Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for a few seconds to soften. Place the wrapper on a clean, damp kitchen towel.
- Arrange a few strips of tofu, lettuce, carrots, cucumber, mint, and cilantro in the center of the wrapper. Sprinkle with chopped peanuts.
- Fold the sides of the wrapper over the filling, then roll up tightly. Repeat with the remaining wrappers and filling ingredients.
- Serve the fresh rolls with the dipping sauce.
