  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon sriracha sauce
  • 1/4 cup water

  • 1 cup shredded carrots
  • 1 cucumber, julienned
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1/4 cup chopped peanuts
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon sriracha sauce
  • 1/4 cup water

Instructions

  • In a small bowl, whisk together the hoisin sauce, soy sauce, lime juice, honey, sriracha sauce, and water to make the dipping sauce. Set aside.
  • Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for a few seconds to soften. Place the wrapper on a clean, damp kitchen towel.
  • Arrange a few strips of tofu, lettuce, carrots, cucumber, mint, and cilantro in the center of the wrapper. Sprinkle with chopped peanuts.
  • Fold the sides of the wrapper over the filling, then roll up tightly. Repeat with the remaining wrappers and filling ingredients.
  • Serve the fresh rolls with the dipping sauce.
