  • 1 pound dried red kidney beans
  • 1/4 cup vegetable oil

  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 pound andouille sausage, sliced
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 4 cups cooked white rice
  • Chopped green onions for garnish

Instructions

  • Rinse the red beans and soak them in a large pot of water overnight. Drain and set aside.
  • In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onion, bell pepper, and celery. Cook until the vegetables are softened, about 5 minutes.
  • Add the minced garlic and cook for an additional 2 minutes.
  • Stir in the soaked red beans, chicken broth, and andouille sausage. Add the bay leaves, thyme, oregano, cayenne pepper, paprika, black pepper, and salt. Bring the mixture to a boil, then reduce the heat to low and simmer for 1 hour, or until the beans are tender.
  • While the beans are cooking, prepare the white rice according to package instructions.
  • Once the beans are tender, use a potato masher to mash some of the beans against the side of the pot to thicken the mixture.
  • Serve the red beans and sausage over the cooked white rice. Garnish with chopped green onions and enjoy!
