Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup tomato sauce
- 8 small flour tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- In a large skillet, cook 1 lb of ground beef over medium heat until browned, breaking it up with a spoon as it cooks.
- Add 1 diced onion, 1 diced bell pepper, and 2 minced cloves of garlic to the skillet with the beef. Cook for 5 minutes, or until the vegetables are softened.
- Stir in 1 tbsp of chili powder, 1 tsp of cumin, 1/2 tsp of paprika, 1/2 tsp of oregano, 1/2 tsp of salt, and 1/4 tsp of black pepper. Cook for 1 minute, stirring constantly.
- Add 1/2 cup of tomato sauce to the skillet and simmer for 5 minutes, stirring occasionally.
- While the beef mixture is simmering, warm 8 small flour tortillas in a dry skillet over medium heat for 30 seconds on each side.
- To assemble the tacos, spoon the beef mixture onto the warm tortillas. Top with shredded lettuce, diced tomatoes, shredded cheddar cheese, a dollop of sour cream, and a sprinkle of chopped fresh cilantro.
- Serve the tacos with lime wedges on the side for squeezing over the top.
