  • 1 block (14 oz) of firm tofu, drained and cubed
  • 1/4 cup of soy sauce
  • 2 tablespoons of rice vinegar
  • 2 tablespoons of honey
  • 1 tablespoon of sesame oil
  • 1 tablespoon of cornstarch
  • 2 tablespoons of vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup of broccoli florets
  • 1 cup of snap peas
  • 3 green onions, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of grated ginger
  • Cooked rice or noodles for serving

  • 2 tablespoons of vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup of broccoli florets
  • 1 cup of snap peas
  • 3 green onions, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of grated ginger
  • Cooked rice or noodles for serving

Instructions

  • In a bowl, mix 1/4 cup of soy sauce, 2 tablespoons of rice vinegar, 2 tablespoons of honey, 1 tablespoon of sesame oil, and 1 tablespoon of cornstarch. Add the cubed tofu and let it marinate for 10 minutes.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated tofu and cook until golden brown on all sides. Remove the tofu from the skillet and set aside.
  • In the same skillet, heat another tablespoon of vegetable oil. Add the sliced bell peppers, broccoli, and snap peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  • Add the chopped green onions, minced garlic, and grated ginger to the skillet. Cook for an additional 1-2 minutes.
  • Return the cooked tofu to the skillet and pour the remaining marinade over the tofu and vegetables. Stir well to coat everything in the teriyaki sauce.
  • Cook for another 2-3 minutes until the sauce thickens and everything is heated through.
  • Serve the teriyaki tofu stir-fry over cooked rice or noodles. Enjoy!
