Teriyaki Marinated Tofu with Stir-Fried Vegetables

Ingredients
- 1 block of firm tofu, drained and pressed
- 1/2 cup of teriyaki sauce
- 2 tablespoons of sesame oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup of broccoli florets
- 1 cup of snap peas
- 3 cloves of garlic, minced
- 1 tablespoon of fresh ginger, grated
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- Cut the pressed tofu into cubes and place them in a shallow dish. Pour the teriyaki sauce over the tofu, making sure it is well coated. Cover and let marinate in the refrigerator for at least 20 minutes.
- In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the marinated tofu cubes and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of sesame oil. Add the minced garlic and grated ginger, and stir-fry for 1-2 minutes until fragrant.
- Add the sliced bell peppers, broccoli florets, and snap peas to the skillet. Stir-fry for 5-7 minutes, or until the vegetables are tender-crisp.
- Return the cooked tofu to the skillet and toss everything together. Season with salt and pepper to taste.
- Serve the teriyaki marinated tofu and stir-fried vegetables over cooked rice or noodles. Enjoy!
